Made in Sheffield all in the SKS workshop on Arundel st.
Steel: 26c3 heat-treated to 63/64hrc
Spine thickness: 2.2mm

This paring knife is a super useful tool for the kitchen. It is perfect for those smaller tasks like garlic, shallots, chillies etc. Or just for those who prefer using a smaller blade. The steel is very hard and very thin so will perform beautifully and keep an edge for a long time as long as it is looked after properly.
Do not put it in the dishwasher. Clean and dry after every use. Non-stainless carbon steel is a fantastic material for knives but it does require a bit more care from your perspective. See the full care guide on the website (coming soon).
The cork strops we sell are the perfect tool for looking after the edges of these knives. I would recommend the chromium oxide pre-loaded strop for this steel.
